Biltong: The word biltong is from the Dutch bil ("buttock” ") and tong (" strip "or" tongue ").
Yukpo: The word Yukpo is the Korean name for dried meat, commonly known as Jerky.
The coming together of the two names (Biltong and Yukpo) forms the new dried meat company "Bilpo" which brings together the best of both languages and cultures.
History of Biltong
Early European settlers (Dutch, German, French) who arrived in southern Africa in the early 17th century used vinegar to cure and preserve the meat of wild game animals (eg Eland) and their growing herds of cattle. Spices were later introduced to Biltong by the Dutch included pepper, coriander, and cloves.
Biltong as it is today evolved from the dried meat carried by the wagon-travelling Voortrekkers, who needed stocks of durable food as they migrated from the Cape Colony north and north-eastward (away from British rule) into the interior of Southern Africa during the “Great Trek”. The meat was preserved and hung to dry on the sides of their wagons for a week or two during the colder winters. Once suitably dried, the Biltong was ready for packing in cloth bags, which allowed air circulation to prevent mold.
Better than Jerky
Biltong is related to Jerky in that they are both dried meats; however, the ingredients, taste and production processes are different. Biltong originated in South Africa, whereas Jerky originates from North and South America.
The texture and taste are the most noticeable to fans of Biltong. Unlike the sugared and oven dried sheets of Jeryk, Biltong is cold cured over several days and similar to a dried steak, which is later cut into slices. This means you can have it soft (rare), medium, or dry (well done).
Moonsung (Korean) and Richard (South African) met in Korea and married in 2017.On their honeymoon in Cape Town, South Africa Moonsung fell in love with Biltong. After returning home to Korea, Richard would make Biltong in a drying box at home for his wife. Home sick friends and family soon started asking for their own orders of Biltong, and soon after the idea of Bilpo was born.
